Kale Salad

  • 3 Cups of Chopped Kale (massaged first with 1 tbsp olive oil)
  • 1/2 an avocado
  • 2/3 cup diced cucumbers
  • 1-2 tbsp raw pumpkin seeds (or sub sunflower seeds)
  • 1/4 cup raisins (or dried cranberries)

  1. Finely chop the kale, then proceed to massage it for 1-2 minutes with 1 tbsp of olive oil.
